Production cycle

Processing stages
Fresh rhizomes are washed, split lengthwise, dried, then graded and sorted. Sun drying takes 7-14 days depending on weather, while mechanical drying can reach the target 10-12% moisture content in 4-5 hours.
Quality specifications
The documented ginger specification is maximum 12% moisture, ideal below 10%; maximum 8% ash; maximum 2% acid insoluble ash; minimum 1.5 ml/100g volatile oil; and clean, split, well-dried appearance.
